In the past, the nutrient-rich potato almost single-handedly saved the world. When introduced from the New World to Africa, Asia and Europe, the delicious tuber provided a slew of vitamins and minerals in an easy-to-grow, easy-to-store form—an introduction that resulted in runaway population explosions around the world.
